Erin was born May 30, 1980 in Three Rivers, MI, to Joseph and Pamela (McDonald) Eichorn.<\/p>\n<p>Erin married Aaron Shafer on May 29, 2004. They had two children, Cade and Libbi Shafer, both still at home.\u00a0Erin and Aaron were always up for an adventure and lived a full life even in the midst of Erin\u2019s 11 year health battle.<\/p>\n<p>Erin is survived by her husband and children; mother, Pamela Eichorn; father and mother-in-law, David and Shelva Shafer; siblings, Alison Eichorn, Adam Eichorn (fianc\u00e9 Leah Troup), Eric (Kerri) Eichorn; in-laws, Roger (Shannon) Wilson and Mark Shafer; and many nieces and nephews.<\/p>\n<p>Erin was preceded in death by her father, Joseph Eichorn.<\/p>\n<p>Anyone who knew Erin, knew she loved to laugh and had a great sense of humor. Her mantra through this journey was \u201cChoose joy\u201d. And she did \u2026 It was not a perfect battle but it was a victorious one. Erin showed us all how to finish well.<\/p>\n<p>A memorial visitation will be held from 10 a.m. to 12 p.m. CST (11:00-1:00 EDT), Saturday, February 20, 2021 with service at 12:00 p.m. CST (1:00 EDT) at Lawson Baptist Church, 18603 US-69, Lawson, MO 64062.\u00a0 Graveside at Lawson Cemetery immediately following the service<\/p>\n<p>There will be live streaming of the funeral for anyone who cannot attend. Go to the <a href=\"https:\/\/www.facebook.com\/lawsonbaptistchurchsbc\" target=\"_blank\">Lawson Baptist Church Facebook<\/a> page. Moorepark Community Church is offering to host a viewing of the live-stream at 1:00 EDT. Lunch to follow the service, 55701 Wilbur Rd., Three Rivers, MI 49093.<\/p>\n<p>The family suggests memorial contributions to Susan G. Her smile was so bright. We enjoyed watching her grow to become a beautiful woman. Her heart was filled with love for her family but most of all for her loving Lord and Savior. We prayed so hard for a miracle to happen, but then we understood that it wasn&#8217;t our will but God&#8217;s. She asked one time that we pray that she didn&#8217;t loose her joy. Most people would have asked for healing, but Erin left that all in God&#8217;s hands. Through her battle with cancer, she kept her sense of humor and her faith never waivered. I believe that her testimony touched many. Our hearts are hurting for all of you.
